"flavored butters"

Tuesday, March 26, 2013

Just the other day, while I was at the supermarket, I was browsing the butter aisle looking for some butter for baking. I noticed that aside from plain, salted and unsalted butter, the only other type of butter available is garlic butter. For some reason, I though to myself, I wish there were more butter flavors available. Bam! Inspiration.

How hard could it be to flavor butter? And especially when you could make your own?

I scoured the internet for decent recipes to try, and I believe I have found a few amazing ones from Dani of High Walls. These are so pretty and simple to make and simply delicious. I especially love the garlic & chill butter flavored butter. These are good to keep in the fridge for a week, and 2-3 months in the freezer. I can't tell you how much I love freezer-friendly food stuff.

CHERRY, HONEY & CINNAMON
INGREDIENTS
1 bar of unsalted butter
1 tin of black cherries
1/2 tbsp honey
1/2 tsp ground cinnamon

Mash the cherries until they are pulpy and strain through a sieve. Keep the juice aside. Add in the butter, softened, and mix to combine. Add in the honey and cinnamon and continue to mix. The liquids would be a little difficult to incorporate with the butter, so feel free to use a kitchen mixer to get a smooth consistency. Allow to sit in the refrigerator for at least 1 hour to let the flavours develop.

ENJOY WITH
Toast, muffins, scones or bagels. Perfect for breakfast and some homemade bagels!

GARLIC & CHILLI
INGREDIENTS
1 bar of unsalted butter
Chilli peppers
4-7 cloves garlic, finely diced

Place the garlic and chilli peppers into a bowl. Add the butter and mix until well combined. Allow to sit in the refrigerator for at least 1 hour to let the flavours develop. For extra spice, you can add in about 3 finely diced birds eye chillies.

ENJOY WITH
Steak, chicken or fish or vegetables, or for cooking with pretty much anything! I can imagine experimenting using this with salmon, replacing the balsamic in this recipe.

CORIANDER & LIME
INGREDIENTS
1 bar of unsalted butter
1 Lime
1 bunch of coriander, finely chopped

Zest 1/4 of the lime and place into a bowl along with the juice of half the lime. Add the butter and mix until well combined. Add salt to taste (if desired).  Allow to sit in the refrigerator for at least 1 hour to let the flavours develop.

ENJOY WITH
Corn on the cob, over fish, cooking stir fry, or over vegetables. I could also imagine using this butter for a savoury french toast.

There are loads more to experiment with in making flavored butter, but there are some basic, common flavors that can be used for almost anything. Enjoy!
